The following recipes are from the "Mountain Maid Best Made
COokBook." I believe that they are insipired from Haitian
cooking but are really a VERY AMERICANIZED version of it.

Chicken With Coconut

2 chickens, about 21/2 lb. each, split into halves.
3medium tomatoes, sliced
salt, pepper, flour, oil
1/3 c. grated coconut
2 medium onions, sliced  3 c.
chicken bouillon
3/4 tsp. curry powder
1 sliced pepper
pinch saffron
paprika to taste

Put salt, pepper and flour into a large paper bag. Put
chicken in bag and shake until well coated.

Brown in oil in thick skillet. Remove from pan and gently
cook onions, sliced pepper, tomatoes, curry, saffron and
paprika. Return chicken to pan and cook over low heat until
tender.

While chicken is cooking, simmer coconut in bouillon 10
minutes. Strain and pour over chicken. Stir well, allow to
blend. Serve.

Chicken And Nut Stir-Fry

Serves 4

1 lb.skinless chicken breasts cut in 1" strips
2 small onions cut in wedges (1 cup)
1 Tbs. soy sauce
2 Tbs. vegetable oil
2 tsp. cooking sherry
1 1/2 Tbs. cornstarch
1/4 tsp. salt
1/2 c.chopped cashews
1 clove garlic, crushed
3/4 c. cold chicken broth or water
1 lb.fresh broccoli

Put chicken in medium bowl with soy sauce, cooking sherry,
salt and garlic; let stand for 10 minutes. Cut broccoli
tops into flowerets and stems into 2" strips; set aside.

In large skillet, heat oil until hot. Add chicken mixture;
stir-fry until lightly browned, 2 to 3 minutes, adding
cashews for last minute. Remove from skillet with slotted
spoon draining as much oil as possible. Add onions and
broccoli; stir-fry until crisp-tender, about 2 minutes.

Combine cornstarch and broth; add to vegetables. Cook and
stir until slightly thickened, about 1 minute. Add cashews
and reserved chicken; cook and stir 1 minute longer. Serve
over steamed rice, if desired.

Variation:

Add 1/2 sliced hot pepper to oil before cooking chicken.
Remove pepper before cooking chicken.
