Haitian beans have an enzyme in the hull of the bean that requires boiling
for one hour to be deactivated. One reason people like charcoal is that
beans can simmer for a long time, and thus deactivate the enzyme.  I have
not had experience with solar cookers, but those who have tell me that their
gaseous distress after eating solar cooked beans has been most unpleasant.
